I DIDN’T eat much today.
In the morning I only had a big mug of coffee and a slice of banana bread. I got hungry at around 5 in the afternoon so I made myself some cherry tomato toasts.
We don’t have non-dairy cream cheese at home so I used regular cream cheese spread as palaman, then I added sautéed cherry tomatoes on top. Masarap siya beh!
I loved the toasts so much I made a second batch (one “batch” makes for two slices of bread). I will try making these again but with fresh thyme and non-dairy cream cheese, if I ever find one.
In the evening it was hella cold so I decided to make tofu kimchi soup. I also cooked sinangag for my family but my mom specifically requested that I add chicken strips and hotdogs on it. I was good with the soup.
This is the second time I’m making this soup. The other day I put too much hot pepper paste so it was a little too spicy for me. I also don’t have Korean red chili powder so I used regular chili flakes instead. My soup would probably look a lot redder with more red paste and red powder.
Otherwise, the soup tasted dope. Most restaurants use soft tofu but medium-firm tofu works just fine for me. I will buy another block of medium-firm tofu this week; I will definitely make this soup again.
